This rice is full of the traditional North African flowers with a few twists. Serve with a cooling tzatziki . To make the dish marry all the flavors make the sauce first.

Ingredients

  • 2 pounds of cauliflower florets
  • 1/2 cup extra virgin olive oil
  •    1 teaspoon salt
  • 3/4 teaspoon pepper
  • 1/2 teaspoon ground cumin
  • 1 large chopped onion
  • 1 1/2 cup basmati rice
  • 6 cloves of garlic, minced
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground turmeric
  • 2 1/2 cups water
  • 1/2 cup pomegranate seeds
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons fresh. mint
  • ½ cup almonds (optional)

Instructions

Heat oven to 475 degrees

Toss cauliflower with 4 tablespoons of oil, salt , pepper and 1/4 teas cumin. arrange the cauliflower on a baking sheet and roast for 10-15 minutes until tender. Put aside.
